On vacation

We left early this morning on vacation. We are headed towards Virginia, but made a pit stop in Gettysburg to see the battlefield. Right now we are hanging out until tomorrow and driving the rest of the way. The weather is rainy here, which stinks. The hotel we are staying at only has an outdoor pool!

I will be posting pictures sometime when we get home.

Exceptional Baked Ziti

I made Baked Ziti last night and I have to say, it was the best I have ever had. This recipe is doubled. Instead of putting this into 2 9x13 pans, I used my big roasting pan. I fried the ground beef in the morning, so this did not take me as long to get together. You could shred the cheese ahead of time as well.

Baked Ziti:

2 boxes of Ziti
3 jars of Spaghetti Sauce
12 oz. Provolone Cheese, shredded
12 oz. Mozzarella Cheese, shredded
3 cups Sour Cream
1 or 2 lbs. Ground Beef
1 or 2 Onions, chopped (optional)
Parmesan Cheese

Cook pasta. Drain. Brown onion with ground beef. Drain. Add spaghetti sauce and simmer 15 minutes. Layer as follows in sprayed pans: 1/2 of ziti, provolone cheese, sour cream, 1/2 of spaghetti sauce, remaining ziti, mozzarella cheese, and remaining sauce. Top with Parmesan Cheese. Bake at 350 degrees for 30 minutes. YUMMY!

Hurry-Up Cake

My 10 year old daughter Amanda is reading a series of Amish books called, "Rachel Yoder-Always Trouble Somewhere", written by Wanda E. Brunstetter. She absolutely LOVES these books. She showed me a recipe at the end of one of the books called, "Hurry-Up Cake". She asked me if she could make it for desert tonight. This cake was absolutely scrumptious!

Hurry-Up Cake:

1 1/2 cups cake flour (do not substitute)
2 teaspoons baking powder
1 cup sugar
1/4 teaspoon salt
2 eggs
1/4 cup softened butter
1 cup milk
1 teaspoon vanilla

Preheat oven to 325 degrees. In a mixing bowl, mix the cake flour with baking powder, sugar, and salt. In a separate bowl, mix the eggs and softened butter. Add the dry ingredients and milk alternately to the egg and butter mixture. Add vanilla and beat hard for 3 minutes. Pour into 2 greased and floured 8-inch layer cake pans and bake for 5 minutes. Raise oven heat to 350 degrees and bake for another 30 minutes. Cool, remove from pans, then frost with strawberry icing.

Strawberry Icing:
4 Tablespoons (or more) mashed strawberries
3 cups confectioners (powdered) sugar
1/3 cup softened butter

Blend butter and powdered sugar together in a bowl. Stir in the mashed strawberries, adding enough to make a creamy frosting. Spread on cooled cake.

Niagara Falls




Still here!

I have to say, I have missed blogging here with my different ramblings. I can't promise I am back in full swing here or not. A lot has happened in our household lately.
Joe fractured his finger, and has been home from work for a while.
The weather has not been to incredibly warm here so we have not been doing much swimming. I planted a small garden, and thank goodness, so far so good. I have 2 lettuce plants (which we have already ate some of, YUMMY!), 2 cucumber plants, 4 zucchini plants, and a big tomato plant. Oh, and also 5 different types of peppers growing. I also planted some Inpatients, and a some kind of bush that does not need much sun. We bought a bird feeder so we could watch the different kinds of birds that come. We have done a lot of yard work, we are just about finished though. The kids have been bored, I know I need to have a bit more structure so I can keep from pulling my hair out!

We will be going away for a weeks vacation shortly. We are going to Williamsburg, Virginia! Yes, I know, very educational vacation! I LOVE history. Last year we went to Plimoth, Mass.!

I have been trying to stay in the Word more lately. It always helps me have a better day when I do. For a while I was also waking up early and walking every morning. Unfortunately I think I lost some of my motivation. Two pounds have crept back on! AHHHH, it is a constant battle. Speaking of battles, am I the only one sick of hamburgers and hot dogs yet? I have been SO bad lately with planning meals. I actually made up a weeks menu last night, and went shopping a little while ago. I feel so much better when I know what we are eating each night!

Well, I hope to post again here on a more regular basis. How is everyone's summer going? Any ideas on keeping kids busy?

Fruit Flavor Milk Shake

A couple of weeks ago we went to Niagara Falls, and on the way home we stopped at the JELL-O Museum. Usually when we go to places we have never been we will buy a souvenir, so we decided to buy a cup from their gift shop. It has a recipe on it that uses JELL-O in it. I am not a huge fan of food coloring, but will drink this is moderation. Here it is:

Fruit Flavor Milk Shake

2 cups of cold milk
1 pkg. JELL-O, any flavor
1 pint vanilla ice cream

Blend. Makes about 4 cups.

Blogging here

I wanted to write a quick note about future posts on TheLargeFamilyLogistics.com. I want to continue writing here, but I have not had much time to do so. I have to put the needs of my family first before writing up posts. I went through some trying times recently and learned quite a few things through it. One was how much time I spent on the computer. Time goes so quickly! My children are only little once. I also know I need to spend quality time with my husband.

Related to deals, I have not done many. I have not even bought a newspaper lately!
If I continue writing here I will be writing about an aray of different topics, not just deals.

At one point I had posted about wanting some guest posts, but I only had 1 response. If anyone is interested in writing guest posts please let me know.

Update...

Today is beautiful outside, so after school was finished we went out to Target and bought a few things. When we got back we stayed outside for a while. Jacob is sleeping for a little while longer, so I have a minute to post.

I have chili in the crockpot for dinner tonight. I also made some corn bread to go along with it! I am slowly getting back into a routine! Things have been crazy here! Life has a way of getting off course!

I am looking forward to tomorrow night. The ladies of our church are meeting at Pizzeria Uno's for dinner. My mom will be going with me. I am so looking forward to some adult time! I am hoping I have time to run to Kohls to buy myself some jeans. I have lost a grand total of almost 30 pounds. I only have one pair of jeans that fit nice!

Life here

I have not been able to post on here for the past three or so weeks due to some family issues, but I am hopeful all will be getting back to normal now.

Just a quick update: I had started working from home a few weeks ago, but that has since changed; couldn't do it, it was too much due to the circumstances in our home.

I am laying myself out on a limb here; I suffer with anxiety issues. Something happened a few weeks ago that just consumed my every waking moment. I was overly worried about something that was not that big of a deal. And as you probably know if you are overly anxious for any length of time it turns into depression. I am thanking God that He is pulling me out of this dark spot in my life. If there were some things I have learned from this ordeal, it would be the most important things in life are God, family, and friends. My house does not matter, the stupid things that had seemed important to me did not matter either. I think this was a wake up call in my life. Life is too short. Sometimes we get ourselves in this rut of running from here to there not realizing the most important things in our lives.
